How To Make Raw Spaghetti

kittylikesspaghetti1I had requests to show how to make some great raw dishes so I’m sharing one of my favorites that’s also super easy and fast to make, Raw Spaghetti!

In this dish I don’t use spaghetti noodles, I use zucchini instead. Check out the video to see how I do this. It’s pretty amazing and easy to do.

Zucchini has great health benefits

  • Vitamin C
  • folate (great for women who are planning on getting pregnant)
  • magnesium
  • potassium
  • fiber
  • 90- 95% water.

There are much less calories per serving in zucchini than in pasta.

A serving of pasta is pretty small because it is calorie dense. You can eat cups and cups of zucchini compared to 1/2- 1 cup of pasta noodles, and zucchini gives you the nutrients your body needs.

Tools for the job– For this recipe you need a mandolin or some way to shred zucchini. You could probably use a cheese shredder or a food processor. You will also need a blender to make the tomato sauce. That’s it!

Let’s start by first making the noodles from zucchini. I use a mandolin which has a long straight blade and a number of small blades that stick up to slice the zucchini in to thin strips. I take the zucchini and slice it long ways to get long noodles. I used about 3 small zucchini’s to make enough for my husband and I.
Shred them in to a bowl and now it’s time to make the tomato sauce.

Here are the ingredients. Now all you need to do is put all ingredients into the blender. You may want to soak the sun dried tomatoes in water for 15-20 minutes to soften them if you have a regular kitchen blender. This will make them easier to blend.

2-3 ripe tomatoes
4-6 oz. sun dried tomatoes
2-3 garlic cloves
2 dates or use agave nectar to taste
4-5 basil leaves, or to taste
italian herbs- tarragon, thyme, rosemary, oregano, basil
mineral salt to taste
2-3 teaspoons olive oil

Blend all ingredients together in the blender until creamy and almost smooth. Taste again, you may need to add a little oil, salt or herbs to give it a punch.

That’s all there is to it! now add the sauce to your noodles and it’s ready to serve. You can sprinkle nutritional yeast on top to give it a hint of flavor in place of parmesan cheese.

Optional- you can add chopped bell peppers, raw olives, leeks or onions, chopped mushrooms or any other veggie you like in Italian food.

This recipe will take about 10-15 minutes. Just goes to show that aneasy-veggie-meals-ebookyone can find time to be healthy and make healthy choices.

Haha! The expression the cat has is the exact same expression my family & friends have when I serve them up something healthy! OMG I almost died when I saw that kitty cat. 🙂

I tried it last week, I love it, I can enjoy pasta with my family and not feel deprived. Actually the kids loved the zucchini as a pasta. (Too bad my husband hates Zucchini, he’ll only eat it in Zucchini bread). Thanks for this wonderful recipe. Now on to trying the spaghetti squash, can’t wait.

Not sure if you have this squash in your area (Im from WI) but I have also used Spaghetti squash also known as winter squash instead of the zucchini…great stuff…love the zucchini version too!

Haha, I had a coworker that used to bring in spaghetti-o’s to work for lunch. I don’t think he “got” the corporate lifestyle very much or when the right time to be frugal is.

I am SO going to try this during the week. I always had heard of using spaghetti squash ilo spaghetti noodles as a healthy substitute. I grimace whenever I would hear anyone mention that as an option.

Growing up, my mother ranked up there in the top worst cooks of all time. I remember we used to have pork chops which was one of her better dishes, which were tossed in shake & bake and then nuked in the microwave on some sort of a 80’s plate that is supposed to make the microwave like an oven. To say the least whatever imagery you have of it’s texture after that fiasco is probably dead on, and I do say that was one of our better meals. I turned vegarian long ago as a fight or flight response to cooking.

Anyhow, she hated squashes and had no idea how to cook them so it usually involved cutting them in 1/2 and nuking them with a pat o butter. They were mushy like mashed potato so when I hear anyone mention squash it rubs me the wrong way and I certainly don’t know how you could make it like spaghetti. However, I do love zucchini cooked just about any way and have since learned how to cook squash the “right” way. I’m still not sure what to do with eggplant so whenever I crave it I order chinese. I love a good spicy egpplant. You have changed my mind that this could be a good idea and I’m actually going to go for it!

LMK if you have any other healthy recipes for zucchini. I’m always looking for ways to make zucchini squash because it’s not my favorite veggie. but a scrumptious recipe will make me eat it more 🙂

I feel for you and your up bringing & I can relate. My mom also didn’t know how to cook, her idea of dinner was microwave popcorn, sad face…
So I learned to make Rice a Roni out of a box, yuck.
And zucchini was also one of those yucky cooked, mushy, bland veggies I was forced to eat when my dad cooked it.
Raw zucchini tastes much different than cooked zucchini. Just like carrots cooked and raw taste completely different. I like carrots, beets,and zucchini raw but not! cooked. I think you’ll like it!
I love asain eggplant also!

Woah! I didn’t know people still eat that! I can’t believe they call that food. There’s things to be frugal about and things, like your health, that you should invest in. I bet he invested his money in a nice car instead, haha. Then he’ll be overweight, unhealthy, & pale driving a corvette.
